Notes: ****** 5.5 gal Batch OG: 1.060 2009/01/31 ********** Washed a batch of yeast from a previous hefeweizen batch. Combined 5.5 gallons of juice with sugar and yeast nutrient. Added washed yeast (approx 1 pint). Temperature at pitch approximatly 57 F (14 C). (I am going for simplicity and low cost on this batch.) 2009/02/01 ********** Temperature at 1700 was approximately 66 F (19 C). Some light signs of fermenation. (Shaking carboy cause some of the carbon dioxide to come out of solution, and positive pressure on airlock.) 2009/02/02 ********** Temperature at 2000 was approximately 64 F (18 C). 30 bubbles a minute. Krausen forming on top of juice, may need blow off tube.. Pleasant fruity aroma coming from carboy. Temperature at 2200 was approximately 64 F (18 C). Blow off tube sanitized and attached. 2009/02/08 ********** Temperature at 2000 was approximately 63 F (17 C). Slimey large bubble krausen still forming on top of juice. Blow off tube still required. Yeast aroma has been stinky sulfery, but is subsiding. Pleasant fruity aroma is starting to come through again as main aroma. Color is dark orang/brown and cloudy. 2009/02/13 ********** Temperature at 2000 was approximately 63 F (17 C). 1-2 bubbles per minute. Slimey large bubble krausen still forming on top of juice. Blow off tube seems safe to remove... replaced air-lock. Yeast aroma is less sulfer... more bread. Pleasant fruity aroma is starting to come through again as main aroma. Color is dark orang/brown and cloudy. 2009/03/13 ********** Temperature at 1700 was approximately 66 F (19 C). 1 bubble every other min or so. (This stuff wont quit!) Pleasant fruity Aroma. Color loooks like apple juice, and is clear like apple juice. Will keg as soon as first batch of apfelwein is gone. 2009/01/09 ********** Batch has been kegged for awhile now... not sure why I have not updated this. Batch is tart with a fruity sweetness from the yeast and nose. Very drinkable... color of apple juice. I will make this agin.
