"Golden Rod Honey Mead"

Recipe:

14.00 lb Wild Flower Honey (2.9 - 3.1 lbs of honey / gal of mead)

Yeast:

2.00 pkg Lalvin 71B-1122 Yeast (direct pitch after hydration)
6.00 tsp Yeast Nutrient
1.00 tsp calcium carbonate (Tums)
1.00 tsp cream of tartar

FG: 1.001

Raw honey from 2013 spring and fall honey flow. Golden rod and floar / citrus / fruit aroma .
Boild water from washing honey from utensils and containers. Added to 14lbs of honey in bucket.
Added water to 4 gal mark and measured specific gravity. Added water to get to desired OG.
Added yeast that had been hydrated first.
Yeast pitched at 85F.

Fermentation noted within 1 hour.
